This is probably one the only baking dishes I know how to make and it’s so easy. You honestly cannot mess this up!

1 Box of Mochiko (Sweet Rice Flour)- 16oz (454 g)
1 Can of Coconut Milk- 13.5oz (400 ml)
2 Cups of Milk
2 Tablespoons of Melted butter (you can also use any oil substitute of your choice)
2 Cups of sugar – (you can reduce the sugar if you’d like)
Splash of Vanilla
Step One: Preheat your oven at 350F (176.67C)
Step Two: Beat your four eggs into a large mixing bowl. Add the one can of coconut milk and two cups of milk into the mixing bowl. Keep mixing! Add your two cups of sugar. Mix in the whole box of mochiko flour into the bowl. It is really important to keep mixing! While you are still mixing, add your melted butter and a splash of vanilla. Make sure that all the large lumps are gone. You want to have your consistency similar to battered pancakes.
Step Three: Butter your pan. Pour in your mixture into the pan and place into the oven for about an hour. After about 20 minutes, make sure to flip the Mochi Cake to the bake the other side. Keep your eye on the mochi cake. You want to have nice brown edges. Your end result should look just like this photo below.
